The process of
freeze-drying of foods implies that cooked foods or fresh ingredients are first
frozen and then put in a vacuum chamber. The vacuum causes the frozen water to turn
into the gaseous state so that the foods dry. When you open the bag with
freeze-dried food and pour in hot water, you add this moisture again.
