
Cook waffles over an open fire
Tasty green waffles with flavors of basil, chives, and browned butter - perfect for outdoor cooking! Topped with a variation of Skagen mix. For a completely plant-based version, simply swap milk, butter, sour cream, and mayonnaise with plant-based alternatives. Feel free to change the toppings with the seasons!
Essentials to bring: cast iron waffle iron, frying pan, paper towels, cutting board, and knife.
Prepare at home: Blend the waffle batter ingredients with an immersion blender until smooth, then pour into a thermos or another container.



Ingredients
Waffle batter
- 3 1/2 cups oat flour
- 1 cup oatmeal
- 1/2 teaspoon baking powder
- 4 1/2 cups milk
- 1 bunch of fresh basil
- 1 small handful of fresh chives
- 25 grams of any type of butter + extra for cooking
- 1/2 teaspoon salt
Creamy tofu mix
- 400 grams of extra firm tofu
- 2 dl of any type of sour cream
- 1 dl mayonnaise of your choice
- 1 red apple
- 1 small bunch of chives, save some for topping
- 2 tablespoons seaweed caviar
- Flake salt
- Oil for frying
Here's how
Creamy tofu mix
- Wrap the tofu in kitchen paper and press to remove moisture. Break tofu into smaller pieces.
- Fry until golden in a little oil in a frying pan. Let it cool.
- Finely chop the apple and dill.
- Mix everything together and season with salt.
Waffle batter
- Melt the butter, browning it until it becomes nutty in aroma.
- Build a fire.
- Grease the waffle iron with butter. Pour in some batter into the iron. Set the waffle iron over the fire, let it cook for about 1-2 minutes (check it occasionally as time may vary based on the fire's intensity), flip it over and cook another 1-2 minutes until the waffle is golden brown and slightly crisp.
- Serve the waffles with the tofu mixture, topped with fresh dill.
