Sweet kolbullar (Swedish bacon pancakes) with lingonberry yoghurt

Ingredients:
Kolbullar
- 400 ml water
- 400 g wheat flour
- 2 eggs
- 2 teaspoons salt
- 1 teaspoon vanilla sugar
Lingonberry yoghurt
- 200 ml thick yoghurt
- 100 g sugared lingonberries
Meal preparation:
- Whisk together water and flour, then eggs, salt and sugar. A good tip is to make the batter at home and bring it in a thermos or bottle.
- Mix the yoghurt and lingonberries to a smooth sauce. If you like, you can save some lingonberries for garnish.
- Fry eight kolbullar in butter, on a grid or in a pan over the fire.
- Serve with lingonberry puree – and cold milk, of course.
Tip! Want more texture? Replace 100-200 g of the wheat flour with, for example, oats, barley or rye.
